 Ingredients:


1 lb petite carrots (or 6-8 regular carrots, unpeeled and halved if desired)

3 tbsp olive oil

2 tbsp honey

1/2 tsp Aleppo pepper

1 tsp cumin

1/2 tsp paprika

1/2 tsp cinnamon

Salt & pepper to taste

Whipped Feta:


8 ounces crumbled feta cheese

1 cup Greek yogurt

Juice of 1 lemon (about 3 tbsp)

3 tbsp olive oil

2 cloves garlic

Garnish:


Chopped parsley

Aleppo pepper

Drizzle of olive oil

Pomegranate arils (optional)

Instructions:


Preheat oven to 400F.

Toss carrots in a bowl with olive oil, honey, Aleppo pepper, cumin, paprika, cinnamon, salt, and pepper.

Transfer seasoned carrots to a baking sheet and roast for 20-25 minutes until fork-tender, tossing halfway through.

While carrots roast, prepare the whipped feta dip. In a food processor, combine feta, yogurt, olive oil, lemon juice, and garlic. Process until smooth.

Adjust the consistency with more yogurt or a few tablespoons of water if desired.

Once done, spread the whipped feta on a plate and top with roasted carrots.

Garnish with chopped parsley, a drizzle of olive oil, Aleppo pepper, and pomegranate arils (optional).
